Rainbow Cupcakes...Valentine's Day Parties

Valentine's Day just happens to be my triplets' birthday and a BIG deal in our house.
This year they asked me to make cupcakes for each of their classes at preschool.
This is what we created.

This is what we used to make them.

-2 boxes white cake mix

-4 eggs

-2 cups greek yogurt

-1 cup skim milk

-2/3 cup vegetable oil

Combine it all in a big bowl and beat on med-high for 2 minutes, until well blended.

Then, we split the batter equally into bowls and used food coloring to make each 'rainbow' color.

Next, I scooped a spoonful of each color into the paper cups. Thankfully, being neat is not a requirement to make these.

After they baked and cooled, we placed them our awesome Snapware cupcake carrier.

YUM!!!!

(It was incredibly good and worth every WW point.)

**This recipe says it makes 4 dozen cupcakes, but I filled the cups a little extra full and got 3 dozen instead.

Today we had the triplets' birthday party. I love the cake..super yummy!!!!

day 45.....birthdays and valentines

Two years ago today I received the most amazing Valentine's present ever......these 3 healthy, beautiful babies. Yes, my triplets were born on February 14th. No, it wasn't planned that way.

I had mentioned that it would be pretty neat to have 'valentines babies' but the doctors were insistent they would not be born for a few more weeks. Well, apparently the girls had a different idea. On 2/13, during a regular growth ultrasound, the doctor discovered that the girls had not grown enough during the 2-week period between ultrasounds, and that it was time to deliver.
So, call it luck, or chance, or fate, or whatever....but I got my 'valentines babies'.

The picture above was the first day they all slept together, so they were not quite two days old. They stayed in that crib together until they went home at 16 days old.

day 15.......if you give a kid a castle

In my never-ending project of getting the basement finished for the kids to play in....I built them a castle. It is really cute...wonder how long it will take them to knock it down?

Today was bitterly cold, a high of 12 and already it is down to below zero wind chills....bbrrrrr....

I need ideas for a cute birthday cake for the babies. Only one month until their 2nd birthday. I'm going to milk the whole Valentine's theme as long as I can.

Okay, so if you read my post from the other day you know it was insanely cold here. Well today it is 52 degrees outside and rainy. This yo-yo'ing is crazy.

I can't believe that tomorrow is Christmas. Time flies so fast. I think we have everything we need, not that we really NEED anything (other than about 12 hours of uninterrupted sleep), but I think the kids will have a blast tomorrow. Later d is going to help me make chocolate covered pretzel sticks. We made some the other night and he loved it. Also, he helped me wash dishes and did a great job. Other than not liking his shirt getting wet of course.
